Absolutely every product, in the kitchen or the restaurant’s stock, follows this charter without exception. It’s how we guarantee total consistency between our values and what we serve.

A charter for every product

This general charter is the minimum requirement. For each product family, we’ve defined a specific charter.

Sought

  • Farmer-bred seeds only
  • Save their own seeds and grow their own seedlings
  • Organic farming
  • Care for biodiversity (hedgerows, fruit trees, pollinator plants, ponds, beehives)
  • Maximum 3 hectares under production
  • Limited irrigation
  • Diversified production

Excluded

  • F1 hybrids
  • Pesticides
  • Chemical soil amendments
  • Heated greenhouses
  • Chemical fertilizer
  • Sulfur / copper (or minimal dose)

Sought

  • Natural pastures
  • Care for plant biodiversity
  • Long rotation practices
  • Extensive farming
  • Self-sufficiency (feed, seed, energy...)
  • Diversified production
  • Slaughter and transport that respect animal welfare
  • Label tied to small-scale, organic farming

Sought

  • Herd of no more than 40 breeding cows
  • Hardy cattle breed suited to the land
  • Systematic grazing whenever weather allows
  • Fed on grass and hay

Excluded

  • Pesticides / synthetic products
  • Housing not dictated by weather
  • Baled silage (>10% of feed)
  • Grain (supplement only)
